Birthday cake protein blondies 

Making 'birthday cake' flavoured things are all the rage in America at the moment. But I can honestly say this was spot on! And the added sprinkles just make the finish so much more.....birthday like! However, it is also sugar free if you minus the sprinkles :(

75g Vanilla Protein
1/4 tsp Stevia
1/8 tsp bicarbonate of soda
30g Low fat yogurt
2 tbsp Nut butter (use whichever suits you best - I mixed cashew and peanut)
2 medium egg whites
50g Low fat cream cheese
Sprinkles (not if making it sugar free)

Makes 8 blondies

1. Preheat oven to 180 degrees C 
2. Put 50g protein powder, stevia, bicarb, yogurt, nut butter and eggs in a mixer a blend altogether
3. Add sprinkles and mix with spoon to incorporate - but don't over mix
4. Pour the thick, gooey mixture into a lined shallow baking tin
5. Cook in the oven for 15min
6. Mix remaining protein powder and cream cheese together (add a little stevia if necessary to sweeten it - sometimes the protein mixed with cream cheese makes it taste bitter)
7. Once blondies have cooled apply the frosting and add more sprinkles - then cut into portions
