Softened apples

We are all guilty of it! We buy lots of fresh fruit and vegetables with good intentions, to find that by the end of the week we have a fruit bowl full of sorry looking kiwi fruits and soft apples. I personally hate waste, I will try and do what I can to save these helpless fruits. Whether this be cooking, freezing or transforming them into fruity smoothies, they will be used. 

Apples are high in fibre and Vitamin C, not to mention rich in antioxidants to protect our bodies from free radicals. So don't waste them, I have put together 3 recipes below of how you can use those soft, sorry apples to brighten up your meals, try them now.

Apple Crumble

4 Apples (chopped) – use sweeter variants to avoid adding sugar
2 tsp Cinnamon
2 tbsp. Flour (oat flour if possible)
¼ tsp. Baking Powder
4 tbsp. crushed almonds
2 tbsp. Coconut Oil
1 tbsp. Honey
Put apples in a pan with 2 tbsp. water and gently simmer until soft
In a bowl mix together flour, baking powder and almonds
Add the coconut oil and rub into dry mixture gently to get crumb
Add honey and stir in
Once apples are at the right consistency transfer them to an oven proof dish and let cool
Once cooled sprinkle on the cinnamon and crumble topping and pop in the oven
Bake in a fan oven at 180 degrees C for 20-25 mins (or until it goes brown)
Serve with crème fraiche, yogurt or frozen yogurt

Spiced Apple Crisps

2 apples (cored and thinly sliced)
1 tsp cinnamon
1 tsp sugar
1/2 tsp nutmeg

1. Pre heat oven to 110 degrees C
2. Mix cinnamon, nutmeg and sugar together in a bowl
3. Place apple slices beside one another on a baking tray and sprinkle with your spice mix
4. Bake in the oven for 45-60mins, until they are dried out and curled up slightly at the edges - transfer to a cooling rack 
5. Once cooled eat to your hearts content

Apple, Banana & Kiwi Smoothie

1 apple (cut into chunks)
1 banana (cut into chunks)
2 kiwi fruits (de-skinned and cut in half)
1 1/2 cups of milk (soy, cows, almond - you choose)
1/2 cup ice

1. Put all ingredients in a blender and whizz it all together until you get the consistency you want
2. Pour into a tall glass and enjoy!
